The main thing is that your mp3 recordings should be clean, if they are, you can convert them to text with this tool - https://any2text.com/ . It will quickly handle all your recordings, which as you say you have a lot of. And I am even afraid to imagine how much agony you would have to go through if you didn’t have such a handy tool as this converter.
